Is Aged Cheddar Cheese low FODMAP?
Low FODMAP — aged cheese loses its lactose. Hard, aged cheeses like cheddar are low FODMAP. Most of the lactose drains away in the whey during cheesemaking, and what little remains breaks down as the cheese matures — so even lactose-sensitive people usually tolerate a normal portion. (Note this is the opposite of its high histamine rating.)
